Southwestern Chicken Salad with Creamy Cilantro Dressing




Spring is simply many weeks away and that i couldn’t be a lot of excited. I’m thinking barbeques, cold drinks, yoghurt, and plenty of salads. one in every of my favorite foods to eat throughout spring is salads as a result of they're lightweight and filling. Plus, they create you're feeling superb within and out.

This southwestern salad is not any totally different. It’s healthy, lightweight and contemporary topped with heat spicy chicken and a creamy cilantro dressing. This creamy delicious dressing is on the far side this world. It’s created with three easy ingredients (sour-cream, cilantro, ANd lime) however it packs an explosion of flavor and is that the good accompaniment to the current tasteful dish.


Ingredients

  1.     For the chicken:
  2.     2 medium chicken breasts
  3.     1 tablespoon taco seasoning
  4.     1/2 teaspoon cumin
  5.     1/4 teaspoon salt
  6.     Juice of 1/2 lime reserve other half for dressing
  7.     1 tablespoon olive oil
  8.     For the Salad:
  9.     2 cups romaine lettuce chopped
  10.     1 ripe avocado sliced
  11.     1 medium tomato diced
  12.     1/2 cup black beans rinsed
  13.     1/2 cup corn rinsed
  14.     1/4 cup cilantro for topping
  15.     Creamy Cilantro Dressing:
  16.     1/2 cup sour-cream or Greek yogurt
  17.     1/4 cup packed cilantro with stems
  18.     juice of 1/2 lime
  19.     1/4 teaspoon salt

Instructions

  1. In a medium ziplock bag, place the chicken breasts, taco seasoning, cumin, salt, lime juice and olive oil. Shake until fully combine and chicken is coated. Allow to marinate for 10 minutes or up to 2 days in advance.
  2. To cook chicken: heat a heavy skillet to medium/high heat (Be sure the skillet is very hot before adding chicken). Add 1 teaspoon oil of choice to skillet. Place the chicken on skillet and cook for 4-5 minutes on each side. Allow to rest in pan for at least 5 minutes before cutting.
